Wood & Bloom is the first in a series of experimental dining events that will explore the marriage of our love for finely crafted drinks and food. Join us on a journey through 6 unique courses, which incorporate a specialty fruit or wood component into both the dish and a WRB beer. From oak barrel-aged and wood-smoked beers, to dishes and brews that integrate fresh fruit in creative ways, this dinner is sure to delight the senses by reimagining how beer and food can come together.

$115 (+tax)/person includes 6 courses with beer pairings and gratuity. Limited tickets available now. Wood & Bloom will be hosted in our Hickory Room events space from 6pm to 8:30 pm on Thursday, February 28th. Tickets are non-refundable, but we accept transfers.

The Menu

Course 1 - Pineapple & Coconut

Dish: Salmon Tartare Cone

Beer: Dunkel & Bloom - Munich Dunkle Tiki Cocktail

Course 2 - Beechwood

Dish: Smoked Scallop Crudo - beechnut romesco, egg yolk jam, pork belly, bacon powder

Beer: Feuer und Wasser - Smoked Helles Lager

Course 3 - Guava

Dish: Guava Mixed Greens - guava vinaigrette, cucumber, pickled carrot, fried spent grain bread

Beer: Pack IPA - India Pale Ale infused with guava


Course 4 - Oak & Beechwood

Dish: Foie Torchon - smoked beet gel, lemon segments, snow crystal, candied brioche coins, pistachio, fleur de sel

Beer: Litany Against Fear - Lichtenhainer, Barrel-aged Smoked Sour

Course 5 - Blackberry

Dish: Squab - blackberry gel, squab demi-glace, seared breast, confit squab leg croquette, microgreens

Beer: The Shape of Things to Come - Barrel-aged sour with cherry & blackberry


Course 6 - Oak Port Barrel

Dish: Délice de bourgogne - port sorbet, roasted green grapes, walnut and acorn crumble, smoked sea salt, pear chip

Beer: Port Barrel Dire Wolf - Barrel-aged Imperial Stout
